Ingredients:
- 1 can butter beans
- ½ cup mashed banana
- 2 tsp. vanilla extract
- 2 medium eggs
- ¼ cup maple syrup
- ¼ tsp. salt
- ½ tsp. baking soda
- 1 tsp. baking powder
- 1 tbsp. coconut oil
- Nonstick Spray
- Confectioners Sugar (optional)
Directions:
- Preheat oven to 350F°.
- Drain and rinse the beans and toss all ingredients to a blender and blend until smooth.
- Lightly coat a 7x11inch baking pan with nonstick spray.
- Pour batter into pan and bake for 25-30 minutes.
- Remove from oven and let cool.
- If desired, sprinkle with confectioners sugar, cut into squares and serve.
Yields: 12 Bars
