Protein Peanut Butter Fudge

Ingredients

  • 2 tbsp. coconut oil 
  • 4 tbsp. natural peanut butter 
  • 2 tbsp. unsweetened cocoa powder 
  • 1/2 tbsp. low calorie powdered sweetener (I used Truvia) 
  • 2/3 tsp. vanilla extract 
  • 1/4 scoop (7.5g) chocolate flavor whey protein powder 

Instructions

  1. Mix all the ingredients until well combined. 
  2. Divide the mixture into 6 silicone muffin cups (or regular muffin tins sprayed with oil). 
  3. Take to the freezer to harden, about 15 minutes. 
  4. Unmold and store in the freezer if they're not to be eaten immediately. They should be eaten directly from the freezer as they melt very quickly. 

Yields: 6 servings

I threw it together last night and ate one this morning it tastes great and is simple to make. No sweetener for me, but my daughter recommended using honey on the next batch.
