Chocolate Blueberry and Orange Muffins

Ingredients: 

  • 2 cups (250g) flour 
  • 3 tbsp. sugar 
  • 2 tbsp. low calorie baking sweetener (I used xylitol) 
  • 1/2 tsp. baking soda 
  • 1 cup unsweetened pumpkin puree 
  • 1 egg 
  • 2 tbsp. melted butter 
  • 3 tbsp. unsweetened cocoa powder
  • Juice and zest of 1 orange 
  • 1 cup blueberries (fresh or frozen) 

Directions: 

  1. Pre-heat the oven to 390°F (200°C). 
  2. Mix all the ingredients except the blueberries until well combined. 
  3. Fold in the blueberries just until they're evenly distributed. 
  4. Line 12 muffin tins with paper liners. Divide the batter into the tins. 
  5. Bake in the oven for for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. 

Yields: 12 muffins
