Ingredients:
- 2 cups (250g) flour
- 3 tbsp. sugar
- 2 tbsp. low calorie baking sweetener (I used xylitol)
- 1/2 tsp. baking soda
- 1 cup unsweetened pumpkin puree
- 1 egg
- 2 tbsp. melted butter
- 3 tbsp. unsweetened cocoa powder
- Juice and zest of 1 orange
- 1 cup blueberries (fresh or frozen)
Directions:
- Pre-heat the oven to 390°F (200°C).
- Mix all the ingredients except the blueberries until well combined.
- Fold in the blueberries just until they're evenly distributed.
- Line 12 muffin tins with paper liners. Divide the batter into the tins.
- Bake in the oven for for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Yields: 12 muffins
